New Cascadia Traditional ™ is a dedicated gluten-free bakery located in Portland, OR. We specialize in hand crafted artisan breads, pastries, cakes, pies and cookies. We verify and source our ingredients to ensure that they are safe for those with Celiac Disease or who are gluten intolerant.
Our gluten-free bakery also serves a rotating lunch menu, including our famous gluten-free pizzas and salad.
Our retail location is in SE Portland at 1700 SE 6th Avenue Portland, OR 97214-3525. We can also be found at the Portland Farmers Market, New Seasons Markets and an ever growing list of cafes and restaurants.
Can you ship to artisan breads? (NY?)
Just purchased today cinnamon raison bread, seeded bread and flax bread.
Do any of these loaves have egg or dairy or soy in them as I have allergies to these foods.

I visited two months ago on my way through Portland. I have Celiac as do 2 of my children. We are dreaming of getting your breads down here in Santa Barbara! Please, please….we’re ready to order! Can’t wait to get your yummy products in the mail. We ate french bread all the way home…..!

Hello, we make a Portland Sourdough that doesn’t contain any commercial yeast-it’s naturally fermented. Also, many of our sweets do not contain yeast. Cakes, cupcakes, brownies, cookies, muffins, coffee cake, etc. are all yeast free.
One more requesting a shipping option…you’ve made all other gluten-free breads not edible…any idea when this might be available? Thank you for your wonderful products!
Hi. Why did I ever leave Portland (after graduating from Reed in 1982)?
O.k., I don’t really expect you to have an answer for that question, but I am wondering if you’ve thought about doing a cookbook? And, if not, perhaps you could recommend some other source for recipes for artisan-quality gluten-free (and vegan) bread.

Hi, We are not contemplating a cookbook at the moment but who knows what the future may lead us to do? In the meantime, you can try doing some research from more traditional bread baking books like, “Crust and Crumb” by Reinhart and then explore “Gluten Free Baking with The Culinary Institute of America”. There aren’t any great gf artisan bread books yet, but these may help. Good luck!
Do you sell any of your products in grocery stores on the westside (Portland)?
Not yet. We are at the NW 23rd Avenue farmers market each Thursday afternoon from 3-7, however. It’s at the corner of 23rd Ave. and NW Savier.

I purchased their flax seed loaf last week. They were so pleasant to me during my first visit and informed me that their breads should be frozen if I didn’t finish it that day. I happy to report that the flax seed bread freezes beautifully. It is also DELICIOUS!
The pizza crust is quite good as well.
We make a Portland Sourdough that does not contain any commercial yeast. It’s naturally fermented. All of our other breads do contain yeast. Our sweet treats are much more varied and your choices are wider in that arena: cupcakes, cakes, cookies, muffins, granola bars, lemon bars….

I was just thinking, sweet potato rolls or scones would be a lovely addition. They are as easy as other things, and suspect they could be a nice change for folks over the holidays. I have been thinking of modifying a recipe that Thomas Jefferson supposedly liked. I tend to reach for the pre-mixed gluten free products, as I cook, but I am not much of a baker.
Anyway, I was having a moment of thought, and wanted to share.
