Chocolate Croissants, Danish & Quiche for Breakfast

Looking to reinvigorate your weekend breakfast or brunch options? Well, we have some exciting gluten-free items that will make you embrace the first meal of the day with joy!

Yes, we have Pain au Chocolat (chocolate croissants) at the bakery in all it’s buttery, chocolatey goodness! We are debuting this little confection Friday, November 23rd and will make it available on a regular basis each weekend. Add a cafe au lait and you could pretend you were in a chic little bistro in France…perhaps on the Cote Azure or in Paris or Annecy. Come, dream with us!

Another new addition to our morning fare is our flaky, buttery danish. Don’t deny yourself the pastry you’ve been craving. It has quickly become a popular treat and we are so happy to be able to offer this up to an eager audience.

If those don’t tempt you, then how about our new hearty, beautiful quiche? This is no ordinary quiche. Its light , fluffy and savory egg base is poured and baked into our pastry crust that can stand on its own!  And our house made granola by the bowl, available with a variety of milks and milk alternatives?

Thanksgiving Menu, Tasting & New Winter Hours for Mondays!

It’s November and that means it’s time to revel in the fall colors, the crisp morning air and the delicacies of the season. It is also time to plan for that feast of all feasts, Thanksgiving! We have our menu below to assist you with your holiday planning. Call us today to place your order (503.546.4901).

We are also excited about opening on Mondays again starting Monday, November 12th. Our Winter Hours are: Monday-Friday 7:30-5:00 and Saturdays 8:00-4:00.  We will be open Monday, Tuesday and Wednesday regular hours and we will be OPEN FRIDAY, NOVEMBER 23RD 8:30-3:00 so come enjoy some breakfast goodies with us and fuel up for your Black Friday activities, whatever they may be!

5 Year Anniversary Celebration is This Week!

We are so pleased to announce that this year marks our 5th year of baking gluten-free breads and pastries for you! We want to celebrate and you are invited to celebrate with us. We have a fun week planned, starting October 16th, when we will debut our new menu items, offer samples, give away prizes and say “Thank you” to all of our fantastic customers.

Your patronage has catapulted our business from its humble beginnings at the Portland Farmers Market to the thriving retail and wholesale bakery we are today. It has been five years of hard work but each time we make someone smile (or even cry) as they bite into something we’ve made or each time we receive a hand written note of thanks, it makes it all worthwhile.

We have made good friends from customers and have seen your children grow up. We’ve been fortunate enough to help you celebrate the milestones of your life by making wedding or birthday or anniversary cakes for your family. We appreciate that our business is more than just another business, but a place where you feel safe and where you feel your needs and desires can be met with the best we have to offer.

We have many great memories from these last five years and we hope to create many more with you. Chris and I and our staff are glad to be here and we are so glad to see you each and every day. Thanks for letting us share in this delicious journey with you.

Tuesday is Pie-A-Palooza: Chocolate Cream, Banana Cream, Pumpkin and Apple, to name a few of the flavors we will be sampling. Starting at 11:00 we will have samples for you to delight in (until we run out) and buy. We will raffle off a pie at 1:00, 2:00 and 3:00. Must be present to win.

Wednesday is FREE slices of Pizza Day: You heard it right. From 11:00 until supplies last, we will sample slices of pizza for you. There will also be a pizza raffle at 1:00, 2:00 and 3:00. Must be present to win.

Thursday is FREE pieces of Cake Day:  It doesn’t get much sweeter than cake and we have some for all to share. We’ll have a variety of our popular cake flavors for you to try (11:00 until we run out) and yes, we will raffle off a cake at 1:00! Chinook Books will be raffled off at 2:00 and 3:00. Must be present to win.

Friday: Bread Samples and $1 Off All Bread All Day! Always wanted to know what that Honey Gold tasted like? Well, this is your day to test it out. We will be offering samples of our breads from 11:00 until we run out. We will have raffles today, too. Gift certificates and a Bread Basket will be raffled off to some lucky winners at 1:00, 2:00 and 3:00 (one prize per raffle & winner must be present to claim prize).

Saturday is all about lunch: We will have a Lunch Special Today Only! Buy a sandwich and either a cup of soup or a side salad for only $10.00 (a $12.25 value) starting at 11:00 and going all day. Yes, we will have raffles today at 1:00, 2:00 and 3:00. Must be present to win.

New Hours Beginning September 10th!

We are in the midst of some exciting changes here at NCT and we are all eager to share some of them with you now and we will unveil even more details later so check back with us soon.

Beginning September 10th, we will be open Tuesday-Friday 7:30-5:00 and Saturdays 8:00-4:00. We will be closed Sundays and Mondays. This change in our hours will be used to plan and implement new and improved menu items, train our staff, maintain the bakery and bring you the best experience in gluten-free eating that we can muster up.

In October we will be celebrating a Re-Grand Opening and our 5 year Anniversary to debut many of these changes. Some things you can expect are new pastry items, new breads, more pies and new lunch offerings. The bakery will get a much needed sprucing up as well.

We want to be your “go to” bakery for artisan quality gluten-free breads, pasties, pies, cakes, etc. and we will be working hard to bring you what you deserve and what you crave.

What is Teff?

Since we’ve started making our Teff Sandwich bread, we’ve received countless questions about Teff.  Also known as Xaaffi or Taf, it is an ancient annual grass native to Ethiopia. The etymology of the word “tef” is related to the Semitic root “ṭff”, which means “lost” due to the tiny grain size.
Nutritionally, teff is high in dietary fiber and iron and provides calcium and protein.  It also contains significant levels of minerals such as magnesium, zinc, and thiamin.  Besides being used in our products, teff is used in injera, the flat sponge-like bread found in Ethiopian cuisine.
Sourced from a farm in Idaho, we use the dark variety in our Teff, Multigrain and Seeded Sandwich Breads and ivory teff in our bagels, pizza crusts, sourdough and specialty breads (Olive Rosemary, Roasted Garlic Parmesan, Cheddar Parmesan, etc.).
Our basic Teff Sandwich Bread is lightly sweetened with molasses and great as toast alongside a scramble.  Our Seeded Sandwich Bread uses our basic teff mixture but has an added heartiness thanks to the sunflower, pumpkin, flax, sesame, and poppy seeds throughout the loaf and on the upper crust. It’s the perfect foundation for a sandwich! Our Multigrain Bread is 77% whole grain and has a sweet and nutty flavor that is naturally derived from our special flour blend. This is my favorite bread for sandwiches or for eating by the slice. Try our Portland Sourdough or one of our other savory breads; you will find them to be a terrific addition to pasta, soup or as a base for a flavorful bruschetta.

Simple, Staightforward, Satisfying & always Gluten Free

About a year ago a long time customer of ours asked me if I had tried a new gluten-free bread that was, at that time, new to the market.  It was described as “whole grain” and really good. There had not yet been a gluten-free whole grain bread that was mass produced and broke free of the long held stereotype of being akin to a brick than to its wheat based  cousin. So I sought out this bread at our local natural foods store.  I read the front of the bread bag and there were the words “gluten free” and “whole grain.”  Next I turned over the package and read the ingredients: Water, brown rice flour (not a bad start),tapioca starch, potato starch (things seemed to have quickly taken a turn in the less-than-whole-grain direction) then oil, sugar, then more refined starchiness. Somewhere down the line, I believe the eighth or ninth ingredient listed, was the other whole grain contained in the bread.  After that were a number of ingredients that I had difficulty pronouncing.  At this point it dawned on me just how different we do gluten-free at New Cascadia.  Simple, honest, wholesome and always gluten-free.

This was about the same time that we introduced our Multigrain bread.  What many consider to be our best bread, it is nearly 80% whole grain and without any refined ingredients or xanthan gum.  Sure, we use starch and xanthan gum in many of our products.  But we keep the refined stuff to a minimum.  Even many of our pastries are mostly wholegrain and made with a short, understandable ingredients list.  We take a simple, straight forward approach to baking: Comfort food for the gluten-free crowd that yearns for grandma’s old fashioned recipes of (pre gluten-free) days gone by.

We believe that our customers deserve the best, freshest baked goods available and we strive to make eating gluten-free an enjoyable experience. We use quality ingredients and even use vegetables, herbs and berries grown in the warmer months from our own organic garden beside the bakery. If you are ever in Southeast Portland, Oregon stop by for a cookie, pastry, pizza or loaf of bread. If you would like a slice of pie or want to order a cake, we will be happy to oblige. We’re sure you will appreciate the difference.
