Our Daily Breads
Honey Gold Sandwich Bread
A whole grain bread that is surprisingly similar to “white bread” in its texture and flavor but much higher in nutritional value. Our best selling bread is perfect for sandwiches, toast, french toast or as it is.
Seeded Sandwich Bread
Similar to the traditional German bread Vollkornbrot, except ours is gluten free and made primarily with dark teff. It is potato-free, soy-free, dairy-free, egg-free, nut-free but loaded with 6 different types of seeds: golden flax, poppy, sunflower, pumpkin, light and dark sesame seeds.
Teff Sandwich Bread
Made primarily from teff flour, most commonly found in Ethiopian injera bread, this bread is lightly sweetened with molasses. It is potato-free, soy-free, dairy-free, egg-free, and nut-free.
Multigrain
The “wholly grail” of bread is here. This is for bread lovers looking for a true whole grain bread with great flavor and none of the starches typically found in gluten-free breads (and it is potato starch free). It’s a beautiful boule that is as good to eat as it is to look at. It is also dairy and egg-free.
Rustic Baguette
One of our most popular breads. We use a natural yeast starter that helps to give this bread a rich, full flavor. The crust is crispy and the interior has big holes and a chewy, light crumb. This bread is amazing!
Bagels
Just like you remember them-crispy on the outside and soft on the inside and even better when toasted with a schmear. We have them in 6 varieties: plain, everything, cinnamon raisin, cheddar parmesan, poppy and sesame. Breakfast is good again! All of our bagels are potato, soy, and egg-free and except for the cheddar parmesan, they are also dairy free.
Challah
This soft egg bread is made fresh every Friday. Available in plain, sesame or poppy, it is a pull-apart bread with a delicate flavor and is a nice side for any dinner or for making fantastic french toast.
Our Seasonal Breads
Dinner Rolls (Winter holiday favorites)
Hamburger Buns (Summer)
Hot Cross Buns (Easter)

Hello,
Yes, everything we make is gluten free. We are a DEDICATED gluten free bakery, so you can be sure that it’s all free of gluten.
Thank you,
Teresa
My daughter and I stopped in last week as recommended by Dave’s Killer Bread, your bread is off the chart and I am so excited we discovered you! Thank you!
Thanks! I am so glad you liked the bread.
I just found out today that I’m allergic to wheat/gluten. I found you on http://www.glutenfreeportland.com... I’m definitely coming in tomorrow! I can’t wait to try the baguettes.
Great! Come on in!
Will you be branching our anytime soon? I live in Wilsonville and don’t visit Portland often enough.
oops, let me rephrase that. Will you be branching out anytime soon?
Do you have nutrition analysis (calories and such) per ounce of your products?
Thank you,
Mike Trout
OMG – don’t ever stop making the seeded bread!! I am so addicted to it I will need a 12 step programme soon!!
Thank you
I’m glad you like it! Thanks.
Mike, we do not have the nutritional analysis for our products at this time. It is likely something we will do in the not too distant future.
Thanks for your eagerness for us to expand! We are going to stay put for the time being, but we are working on making some of our items available at local stores and cafes. Keep an eye out!
Hi – Dave’s Killer Bread directed me to you when I e-mailed to whine about missing bread and begging for a gluten-free option. Before I make a trip to Portland to stock up on bread I want to check on ingredients. As I am avoiding dairy and eggs, I am excited to see that most of your breads appear to be vegan. Do you use any soy? I also noticed the vegan chocolate chip cookies in your products list. Do you use soy-free chocolate chips? And do you make decorated kids’ birthday cakes?
Hi, Most of our breads are vegan and all are soy free as we do not use soy flour. Our vegan sweets do contain soy, however, either in the form of Earth Balance buttery spread or soy lecithin in the chocolate chips. We are developing new vegan/soy free recipes so keep a look out for new items coming soon. Thanks!
Oh, we also make great cakes for kids (and the kid in all of us). Give us a call: 503.546.4901
Hi,
Besides a Gluten-free diet, I am also on an Anti-Inflammatory one as well, which significantly reduces the choices available. I noticed in an earlier post that you don’t have the nutrional values available, but are the ingredient lists available? Or would it be better just to come in and talk with one of your staff?
Thanks, I’m hoping to find a product that will work.
Hi, We have our ingredients lists available at the bakery for your review. Our staff can also help point you in the right direction as far as what is available for you to eat. I can also e-mail you our lists if you would like. Just drop me a line at: info@newcascadiatraditional.com and I will respond quickly.
Regards,
Teresa
I see that many of your selections are vegan and I’m wondering if you have any yeast-free options?
Hi, We have a Portland Sourdough that is naturally fermented (no yeast is added) and vegan and our vegan sweets are yeast free.
I’m wondering if your bread freezes well. I live in Lebanon, Oregon (between Salem and Eugene) and was hoping to stock up when I make it up to your store in Portland. But I don’t want to buy lots of yummy bread and have it spoil if I don’t eat it all at once! Any idea how long I can keep some of your breads in the freezer?? THANKS!!!
Yes, our bread freezes very well. In fact, we recommend that if the bread isn’t consumed within 24 hours of purchase that it should be sliced and frozen.
Of course! We require 48 hours notice for all orders, and either a 50% deposit or full payment at the time the order is made. Call us with adequate notice and we will have your goods ready and waiting for you.

quiver!
Thanks, Michael!
Thanks for being here….I’ve been treasuring your breads for a couple of years now.
I thought I could try to make the Seeded bread at home but when I found the recipe and saw the traditional gluten Vollkornbrot, takes THAT long to make…I will happily pay for my favorite bread!!
Thanks for your comment Linda! Making the Seeded bread is time consuming, but it is a labor of love. We’re glad you like the bread!
