This schedule applies to our retail bakery, as well as for our deliveries to New Seasons. Please take note of this bread schedule when placing special orders. Breads are only available to pick up on their corresponding days listed above.

Daily Breads

All of our breads use whole grain, gluten-free flours and are free of soy, corn, and potato. See below for other ingredients.

Farmhouse Sandwich Bread-(vegan, yeast free) $6.80.

A naturally leavened gluten-free sandwich bread. The light, open, tender crumb belies the fact that this bread is mostly whole grain. Perfect for sandwiches or toast.

Ingredients: water, natural starter(millet flour, water), brown rice flour, millet flour, tapioca flour, xanthan gum, salt

Rustic Italian-(vegan, yeast free) $6.30

Based on the classic Italian Pugliese bread, ours is naturally leavened. It rises slowly for many hours, developing flavor and a soft open crumb. It is then baked to perfection giving it a crunchy crust.

Rustic Baguette (vegan, yeast free) $5.50

This French style rustic bread will win you over. It’s perfect for bruschetta, dipping into salted olive oil or for a generous pass of garlic infused butter. One of our most popular breads. We use a natural yeast starter that helps to give this bread a rich, full flavor. The crust is crispy and the interior has big holes and a chewy, light crumb. This bread is amazing!

Boiled Bagels (vegan) $2.00, Bakers Dozen $24.00

Our boiled bagels are so light you will seriously forget you are eating gluten-free! We currently offer 4 varieties: plain, everything, poppy seed, and sesame seed. Come down to the cafe and try one toasted with a variety of delicious toppings!

Hamburger Buns (vegan, yeast free) $1.50 each, $6.00 4-pack.

Similar to a ciabatta roll, these are way more versatile that your average hamburger bun. Awesome for everything from chicken salad to cheeseburgers.

Rotating Breads:

Hot Dog Buns- (vegan, yeast free) $1.50 each, $5.70 4-pack. Available Tuesdays and Fridays.

These hand-made versatile buns can be used for hot dogs, sausages, and for a sub-style sandwich. They are naturally leavened for enhanced flavor.

Honey Gold Sandwich Bread (dairy and egg free) $6.80. Available Tuesday, Wednesday, Friday, Saturday.

A whole grain bread that is surprisingly similar to “white bread” in its texture and flavor but much higher in nutritional value. Our best selling bread is perfect for sandwiches, toast, french toast or as it is.

Seeded Sandwich Bread (vegan) $6.80. Available MONDAY and THURSDAY

Our Seeded bread was the very first bread we produced at New Cascadia Traditional in 2007 and it has remained a favorite over the years. It has evolved from a dense, German style bread to its latest incarnation as a flavorful wholegrain sandwich bread.

We begin with a millet sourdough starter that enhances the flavors of the whole grain teff and brown rice flour. To that we add an assortment of seeds: pumpkin, sunflower, poppy, flax and sesame. The final result is a hearty, flavorful, nutrition rich sandwich bread. Pile on the toppings for a full sized sandwich or simply schmear on some fresh goat cheese and top with some sliced apples. This bread can handle it all.

Cinnamon Raisin Bread (vegan) $6.80. Available SUNDAY and WEDNESDAY

On the sweeter side, our hearty cinnamon raisin bread is great for toast (especially French toast!) or au natural. It is also known as the finishing touch on a killer peanut butter sandwich. Similar in texture to the honey gold and swirled with raisins and cinnamon, this sandwich loaf is our delicious gluten-free take on a traditional favorite.

Challah (dairy free) $7.20. Available MONDAY and FRIDAY.

A traditional soft egg bread made fresh every Monday and Friday. Made with honey, this bread has a slightly sweet, delicate flavor and makes fantastic french toast.

Olive Rosemary Bread (vegan, yeast free) $5.85. Available WEDNESDAY and SATURDAY.

This rustic olive boule is a favorite around these parts—ideal for serving with (gluten-free!) pasta, dipping in soup, or tearing off delicious chunks in a fit of ravenousness. Crusty on the outside and soft on the inside, it’s similar to our rustic baguette with the added bonus of kalamata olives and fresh rosemary.

Dark Levain (vegan, yeast free) $6.30. Available TUESDAY and THURSDAY.

Similar to our Rustic Baguette and Olive Rosemary, the Dark Levain is a yeast-free bread made with our house sourdough starter. This darker bread is similar to a rye—great for sandwiches or tearing and dipping in soup.

New Cascadia Traditional is a dedicated gluten-free bakery and retail cafe. We take precautions to eliminate cross-contamination with other ingredients that are also present at our RETAIL CAFE: eggs, milk, soy, peanuts, and tree nuts.

Our breads  are baked at our WHOLESALE BAKERY facility where products are made on shared equipment with hazelnuts, and we take precautions to eliminate cross-contamination.
