Testimonials

“Chris and Teresa are really onto something here. Not only are they baking things that you’d swear weren’t Gluten-Free, they’re educating everyone that stops by to sample their amazing foods. The nicest people that you’ll ever meet and they also just happen to make Portland’s best cookies too, hands down.”
– Richard L. • Portland, Oregon

“My family and I just returned from a vacation to L.A., so of course we had to find out what all the hype was about for Sprinkles and BabyCakes. We tried them both and while they are both good, I would like you to know that your cupcakes are much better. I also tried a chocolate chip cookie from BabyCakes-no where even close to being as wonderful as yours.”

“Happiness to me is a turkey sandwich on New Cascadia teff sandwich bread.”

“I’ve been gluten free for more than a year, and I’ve been enjoying your baked treats for most of that year. However, since going GF I’ve mostly avoided GF bread as none of them measured up to the wonderful whole-grain goodness of my mom’s homemade, whole wheat bread. I preferred going without to accepting second best.
Yesterday I wandered in to New Cascadia Traditional for a treat (your cupcakes are amazing, GF or not!), and on a whim I decided to try a loaf of the teff sandwich bread.
I went home planning to make Thai food for dinner, but after tasting your bread all I wanted was another few slices! Then for lunch today I ate a peanut butter and jelly sandwich-I don’t think I’ve ever enjoyed a sandwich more.
I don’t think I could explain to anyone who isn’t gluten intolerant just how wonderful it is to enjoy one of the simple pleasures I’ve missed out on over the last year-a simple slice of flavorful bread.”

“I cannot begin to express my full appreciation for your dedication to your bakery. My family looked forward to pizza night for days. I appreciated being in a warm atmosphere with great food-knowing that my needs are understood, and my health is being nurtured. I hope that you all got through such a busy night with a sense of success-so many customers!”

WOW! The taste sensation of those apple scones is AMAZING!!!! They are a true treat, worhy of any upper scale dining establishment. I so appreciate that you are here in my fair city, and appreciate that the GF movement is finally causing the options available to be truly delicious.

Thank you and keep up the baking. If you ever need taste testers, I’m on board! I would also dearly love some GF baking lessons. Maybe some classes could be offered!?!

    THANK YOU!
I have a family member that is a celiac and he misses out on the breads and goodies at family gatherings. Like you mention in your article 11,000 miles road trip the world seemed to shine less brightly for him, but NO MORE!
I found you completely by accident, I was going to Oil Fiters next door and it was the best find ever, he now looks forward to family gatherings and the goodies that I can provide from your wonderful business. He places orders!
I am fortunate because I do not have to woory about the types of breads I eat but even so the things you make top the charts of some of the best ever!
Thank you again for the wonderful goodies!

Yay! I am happy that you’ve found us and that we can make your family member happy (and you). Thank you!

Yay, loving the Golden Honey bread. I discovered, too, the savory rolls – oh my gosh, oh my goodness, pure heaven. The tomato kalamata is my fave (although that is a toss up with all the others).

I also tried the cheesecake bar, but it was not very flavorful, and the sweet scone with cardamon was a little too cardamon-y (is that even a word?). Not sure what to do about those, because you have such other delights. Just an FYI.

I got to bring my friend in with her two kids a couple of weeks ago….I was so astonished at the look on the kids’ faces when they saw the choices. Priceless, so THANKS FOR THAT!

Oh, and bringing back the macaroons and the Mexican tea cookie (not sure what it is called, really – it is coated in powdered sugar) would be special!

Thanks for your continued presence in your community. A treasure, for sure!

    Holly
